{Ingredients}
1 tbsp butter
2 lbs stew meat (I buy chuck or shoulder roast and chop it up myself)
2 tbsp Almond Meal or flour
1/2 tbsp cumin
1 tsp rosemary
1 tsp paprika
1 c red wine or 1 can soda
2 tbsp finely chopped chocolate
1 yellow onion, finely diced
1 jalapeno, deseeded and finely diced
3 potatoes, peeled and diced
2 c beef stock
32 oz diced tomatoes
{Method}
- In a stock pot, saute onion and jalapeno in butter over med heat.
- Dredge beef in almond meal or flour (I like to to toss in a freezer bag- fewer dishes!) and add to pot with seasonings.
- Deglaze with soda/wine and bring to a boil.
- Stir in chocolate and let it melt. Reduce until liquid is almost gone.
- Add remainder of ingredients and gently simmer until beef and vegetables are tender.
This is one of those recipes that just gets better and better the longer it cooks!
